Basil Orange Rice

INGREDIENTS

  • Zest of 1 orange
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 1 tbsp canola oil
  • 1 1/2 cups jasmine rice
  • 2 1/4 cups water
  • 1/2 cup golden raisins
  • 2 tbsp honey

DIRECTIONS

Combine the zest and the basil in a bowl and set aside.
Preheat a medium saucepan on medium-high for 2-3 minutes. Pour the oil into the pan, followed by the rice. Cook for 2-3 minutes, stirring continuously, or until the rice turns bright white.
Pour the water into the pan and bring to a boil. Reduce the heat to the lowest setting and cover tightly. Simmer for 15-18 minutes (do no remove the lid).
Fluff the rice with a fork and stir in the basil mixture, raisins, and honey.
